In order to maintain the strong characteristics of Shanli, the distillery only uses it three times and reassembles it to minimize the impact of the barrel on the wine. 

The whiskey produced by SAWAKI has a strong smoked peat. The influence of the soil is relatively little from the process of wheat planting to fermentation and distillation. Many of the mineral flavors come from the aging environment, such as the sea breeze on the beach. Known as the single malt whisky that best reflects the style of Japanese brewing, many connoisseurs even admire it as the king bottle of Japanese whiskey.

為了維持山梨的強烈特色，蒸餾廠只採用使用三次，並重新組裝，以期能夠讓桶子對酒的影響降到最低，堪稱是日本威士忌原始風味的捍衛者。

SAWAKI所生產的威士忌，具有強烈的燻泥煤，麥由種植到發酵、蒸餾的過程中，土壤的影響相對少，當中的礦物味很多就來自於陳年的環境，如海邊的海風特色，被稱為是最能體現日本釀酒風格的單一麥芽威士忌，不少行家更推崇其為日本威士忌的王瓶。
